Ginger’s brings its much-loved Redruth sweet spot to the Buttermarket, serving up loaded waffles, thick milkshakes and plenty of sweet treats worth saving room for.

And when the sun goes down, things get a little more grown-up with frozen cocktails and indulgent desserts joining the menu.

Meet Ginger

Ashley Sweet, better known as Ginger, is behind the retro sweet spot in the courtyard!

Ashley opened Ginger’s Diner in Bond Street in 2024, creating a bright, characterful diner that quickly became a local favourite. Now, Ginger’s is bringing that same personality, joyful hospitality and love of a good milkshake to the Buttermarket.
