New Pop-up: Silco

We’re so excited to be joined by Silco, bringing globally inspired flavours, local produce and fresh ingredients for their small plates – perfect for sharing, snacking, or feasting.

Our newest pop-up, Silco, is an independent Cornish drinks company with roots in the harbour town of St Ives. Known for their harbour-side bar & kitchen, Silco’s food and drink take inspiration from street food adventures and global flavours, all paired with their own expertly crafted drinks.

Founded and run by three brothers; Tim, Greg, and Bertie. Expect globally inspired flavours, local produce and fresh ingredients. Their ethos? Keep it local, keep it ethical. That means fish caught fresh off the Cornish coast, meat from nearby farms, and seasonal veg grown right here in the UK – all sourced from local suppliers they know and trust.

1. What is the weirdest thing you’ve ever eaten? On a little trip to Thailand many moons ago we once had the pleasure of enjoying a bowl of chicken foot soup. It was the first and last time.

2. Where’s your favourite place in Cornwall? Having grown up in Zennor, its still our favourite place.

3. If you were able to meet anyone in the world, past or present, who would it be? Mo Farah

4. What’s your favourite ingredient to cook with? Love Sardines when they’re in season.

5. Can you tell us one of the dishes on your Buttermarket menu? One of our all-time bestsellers, inspired by the street food of Sri Lanka – Sri Lankan Lentil Fritters – Pol sambol, coconut yogurt and all spice chilli jam

6. If you had a pet pigeon, what would you name them? Percy

7. If you could only eat one cuisine for the rest of your life, what would it be? Authentic Thai food

8. What’s your favourite song to play in the kitchen? No Confusion by Ezra Collective 

9. What’s your favourite drink to pair with your dish? One of our signature Limoncello & Sumac Spritzers
