Earth and Soul are bringing Mediterranean food with a Cornish twist to the Buttermarket kitchens.
Cooking with fresh, seasonal produce and traditional techniques from a diverse variety of cuisines. Their menu is popping with vibrant fusions of Lebanese, Israeli, Italian, Spanish, Greek, French and Turkish street food.
1. What is the weirdest thing you’ve ever eaten?
Lithuanian zeppelin – not sure if it was the place I tried it in but it was the strangest texture and did not taste like it ever came from a potato!
2. Where’s your favourite place in Cornwall?
St Michael’s mount, it reminds me of Italy and is such a beautiful place to sit and relax.
3. If you were able to meet anyone in the world, past or present, who would it be?
Elvis.
4. What’s your favourite ingredient to cook with?
Tomatoes, especially when I have grown them myself, they are so diverse and can be used to change the taste, texture and flavour of so many dishes.
5. Can you tell us one of the dishes on your Buttermarket menu?
Our 12-hour beef short rib ragu and Cornish Gouda toasted sourdough sandwich, with the option of a truffle dip for your crusts, is indulgent and delicious and the perfect food for those colder days approaching.
6. If you had a pet seagull, what would you name them?
We had one for a while and my kids named him Steven, he used to come in my kitchen at home and steal food off the hob.
7. If you could only eat one cuisine for the rest of your life, what would it be?
Italian.
8. What’s your favourite song to play in the kitchen?
The Teskey brothers are my current kitchen companion.
9. Coffee or tea?
Coffee all the way.
10. Which is the best form of potato?
Dauphinoise.
